I worked for Oliver Shaul in the late 60s (with Elaine Beadle - hello Elaine!) and shared the excitement of the Oliver C. Shaul & Associates consultancy and the establishment of The Summit. Mr Shaul was a wonderful person to work for and always a thorough gentleman. He gathered around him the leading lights of the hospitality and restaurant industry of the time and nurtured many careers. I certainly learned a lot in my years with OCS and remember him with great fondness. May he rest peacefully.

I worked on Level 39 in Australia Square from 1969 to 1972. I first met Oliver in 1969 and I became a regular visitor to the Summit. My opinion of Oliver was always very high, he was a perfect Gentleman and a great host. Sydney was very ordinary in the 1960's, still living in the 1950's in many ways. But the Summit set new standards of excellence and it became the shining light for eating out in Sydney. Regretably people like Oliver Shaul no longer exist, he was part of a new spirit in Sydney and I hope he will always be remembered and not allowed to be fogotten.

How sad. I had the privilege to start my working life under the guidance of Mr Shaul, Henry L, Hans Z and Robert R in 1968 at the Summit. I could not have wished for better role models, in particular Mr Shaul. Always my ‘mentor’, we enjoyed a mutual respect for each others ability to always seek the best. You touched many people, you gave people a chance to prove how good they could be. May you rest in peace Mr Shaul, where ever you are, I hope they have a decent Cognac or Champagne always near by.

I worked with Oliver from 1960 till 1971, first in Melbourne at Federal Hotels then in Sydney. I became the Associate of Oliver C. Shaul & Associates! Together we created the Sheraton Hotel in Macleay Street, built a consultancy practice to the hospitality industry and established the Summit Restaurant atop Australia Square. He was my business teacher, guide and mentor, we were an incredible team and although my life has taken me on vastly different paths, I have never forgotten him. May his journey now be filled with peace.
